A cuisine recognised by UNESCO

Traditional Mexican cuisine was inscribed on UNESCO's Representative List of the Intangible Cultural Heritage of Humanity in 2010 — the first cuisine to be listed in its own right.

Some of what you need is closer than the guides suggest. Mexican-style cheese — Oaxaca, cotija, panela, queso fresco — is made in Quebec, not imported. Nixtamalized masa is produced in Canada too. And the same dried chilli can cost four times more per kilo depending only on the size of the bag. We put the numbers in, with the date we read them.
