How to Make Authentic Guacamole: Tips from a Mexican Chef

Perfect guacamole: less is more
The secrets are in the details: avocado ripeness, ingredient proportions, mashing technique, and knowing when to stop.
The base recipe (serves 4)
3 ripe Hass avocados, 1/2 white onion finely chopped, 1-2 serranos or jalapenos deseeded and finely chopped, generous handful of fresh coriander roughly chopped, juice of 2 limes, salt to taste, optional 1 roma tomato deseeded and diced.
Correct technique
- Halve avocados, remove stone, scoop out flesh
- Mash with a fork, NOT a blender. Authentic guacamole has texture.
- Add onion, chilli, coriander, lime and salt. Mix gently.
- Taste and adjust. Guacamole needs more salt and more lime than you think.
- Serve immediately.
Common mistakes
- Unripe avocados: Will be bitter and flavourless
- Blending/processing: Destroys the characteristic texture
- Too little salt: Avocado needs generous salt to shine
- Too little lime: Acidity balances the fat and prevents browning
- Too many ingredients: Don't add garlic, cumin, sour cream, mayo or peas
UK tips
Buy avocados 2-3 days ahead to ripen. Fresh lime juice is non-negotiable. Fresh coriander is cheap and essential. Perfect guacamole takes 5 minutes, costs under £3 for 4 people, and is incomparably better than any jarred version.
