Goodbye supermarket meal deal
Mexican food and meal prep are a natural combination. Many dishes keep well, improve with time, and can be combined differently so you don't get bored.
Sunday session (2-3 hours)
Base 1: Large batch of Mexican rice. Keeps 5 days. Base 2: Black beans with onion, garlic and cumin. Protein: 1kg chicken thighs marinated in chipotle, lime and garlic, baked and shredded.
The 5 lunches
- Monday - Burrito bowl: Rice + beans + chicken + sweetcorn + pico de gallo + avocado
- Tuesday - Tacos: Tortillas (packed separately) + chicken + beans + pickled onion
- Wednesday - Mexican salad: Lettuce + rice + beans + chicken + lime dressing
- Thursday - Quesadilla: Flour tortilla + chicken + cheese + beans (heat in sandwich press)
- Friday - Buddha bowl: Rice + beans + fresh avocado + sweetcorn + salsa + pumpkin seeds
Weekly cost: £12 total (£2.40 per lunch)
