Regional Mexican Cooking in UK Restaurants: Which Region Is It?

"Mexican food" is a bit like "European food": a useful label that hides enormous regional differences. A taco stand in Mexico City, a seafood shack on the Pacific coast of Sinaloa and a family kitchen in Oaxaca cook very differently. In the UK, most menus blur those differences into a national greatest-hits list of tacos, burritos and guacamole. But a growing number of venues tell you where in Mexico their cooking comes from, and this guide brings them together.

Our method is simple: we have included venues whose name or listing in our directory ties them to a particular region of Mexico, through the cooking, the chef's origins or the name. We report what the listings say, as of October 2026, and we have not visited the kitchens. Names link to each venue's page in our directory.

Mexico City

The capital's food is street food above all: tacos from griddles and spits at every corner, tacos de canasta sold from baskets on bicycles, and cuts such as suadero, a thin, smooth-textured cut that is confited or fried for tacos. Tacos de canasta originally come from Tlaxcala but are eaten throughout central Mexico, especially in the big cities.

  • Madre Manchester at Kampus in Manchester and Madre Liverpool at the Albert Dock in Liverpool are described in their listings as Mexico City-inspired, with tacos, ceviche and wood-grilled dishes.
  • Pancho's Burritos in the Arndale Market is described as run by a Mexico City native since 2009.
  • Este Cuate in Leeds is described as the project of a chef raised in Mexico City, with ingredients imported from Mexico and tortillas made from scratch.
  • Cargo Cantina at Wapping Wharf in Bristol is described as inspired by the cantinas of Mexico City.
  • Taquiza Peckham in Peckham is described as having a head chef who trained in Mexico City.

For what to order in the capital itself, read our guide to Mexico City street food and our guide to tacos de canasta.

Jalisco and Guadalajara

Western Mexico's second city gave the world the torta ahogada, a crusty sandwich "drowned" in a sauce of vinegar, cumin and chile de árbol, and Jalisco is the home of birria, the chilli-braised goat, beef or lamb that has become a craze in Britain.

  • Del 74 in Dalston is described in its listing as an ode to Guadalajara, with regional dishes rarely found outside Mexico.
  • Jardin Cocina on Watford's High Street lists Jalisco-style beef pozole among its dishes, alongside Baja-style ceviche and duck mole.

Our guide to Guadalajara and Jalisco covers the region's food in depth.

Sonora and the north-west

Northern Mexico is cattle and wheat country. Flour tortillas are everyday food there, the burrito is a traditional food of Ciudad Juárez on the border, and grilled beef is the centrepiece of a meal. Sonora's capital, Hermosillo, is also known for the Sonoran hot dog, invented in the late 1980s, which shows how American fast food has been absorbed into Mexican street food.

  • Sonora Taqueria in Stoke Newington is described as specialising in north-western Mexican food, grilled meats and flour tortillas. It began as a taco shack in Netil Market.

Sonora Taqueria

Address: 208 Stoke Newington High Street, London N16 7HU
Opening hours (directory listing): Mon–Tue closed · Wed 12:00–17:00 · Thu–Sat 12:00–22:00 · Sun 12:00–17:00
Website: sonorataqueria.com

Our guide to northern Mexican cooking and our guide to Sonoran hot dogs explain the region.

Tijuana and Baja California

The border city of Tijuana is where the quesabirria, the cheese-stuffed birria taco with its cup of broth, was first developed, and Baja California is the home of the battered fish taco.

  • Homies on Donkeys in Leytonstone is described as Mexican-owned and run by chefs raised in Tijuana, serving handmade tortillas.

Our guide to Baja California covers fish tacos and the Valle de Guadalupe wine region.

Oaxaca

The southern state of Oaxaca is one of Mexico's great food regions, known for its moles, for the tlayuda, a large, thin, crisp tortilla spread with beans and topped with meat, cheese and salsa, and for mezcal.

  • Chido Wey in Bristol's Old Market is described as a Cali-Mexican kitchen that brings Oaxacan flavours to San Francisco-style street food.

The national chain Wahaca takes its name from a phonetic spelling of Oaxaca, though its menu ranges across the country; see our guide to the Mexican chains in the UK. For the real thing, our guide to Oaxacan cuisine is the place to start.

Puebla, Nayarit and the Pacific coast

Two more venues carry a region in their names. Poblano Eatery in West Bridgford takes its name from Puebla, the state that gave Mexico mole poblano and, through its Lebanese immigrants, tacos al pastor. NAYARITAS KITCHEN in north London takes its name from Nayarit, the Pacific state on Jalisco's north-western border. Aguachile, raw seafood in a fierce chilli liquid, is associated with Nayarit and originated on the coast of neighbouring Sinaloa. It has 4.8 on Google from 447 reviews. A name alone does not tell you what is on the menu, so check before you go.

Our guide to Puebla covers that state's cooking.

The regions that are missing

Just as interesting is what our directory does not show. No venue's listing ties it to the Yucatán, the home of cochinita pibil, the Maya-rooted slow-roasted pork of the peninsula, marinated in citrus and annatto. The Gulf coast of Veracruz, Michoacán in the west and Chiapas in the south are absent too. That probably says more about how venues describe themselves than about what they cook, but it also means that if you want those regions' food in Britain, you will mostly be cooking it yourself. Our guide to Yucatán and Maya cooking and our cochinita pibil recipe are the place to start, and the ingredients, annatto paste above all, are sold by the online Mexican specialists in our shop directory.

Why it matters

Knowing the region helps you order. At a Guadalajara-inspired venue, look for birria and tortas ahogadas; at a north-western one, flour tortillas and grilled beef; at a Mexico City one, tacos of suadero or pastor; at an Oaxacan one, mole and tlayudas. And it helps you judge: a venue that names its region is promising a particular kind of food, and you can hold it to that promise. Our guide to what to eat in every region of Mexico is a good companion.
