Chilcostle chilli is a dried chilli native to Oaxaca, with an intense red colour and mildly hot, earthy flavour. It is used mainly in Oaxacan coloradito mole and regional salsas of the Cañada area. It is rarely found outside Oaxaca but contributes an unmistakable deep red colour and distinctive smoky character.
