Pasilla Chilli

Pasilla chilli is a long, near-black dried chilli with a deep dried-fruit flavour and mild heat. It is one of the three chillies in Oaxacan black mole, and also features in mole poblano and enchilada sauces. It is briefly toasted before soaking to release its complex, earthy aromas.
