Sherry

A fortified wine of Spanish origin widely adopted in traditional Mexican cooking. Used to flambé meats, add depth to moles, sopa de lima, and slow-cooked beans. Wine-infused cajeta (dulce de leche) is one of Mexico's most celebrated sweets featuring sherry. Lends nutty, sweet notes to stews and desserts.
