Quince

Quince is a yellow fruit with firm, astringent flesh that must be cooked before eating. In Mexico it is used in Christmas ponche, in quince jam, and in ate de membrillo, the traditional fruit paste. It also features in the filling of chiles en nogada as part of the sweet and savoury fruit mince stuffing.
