History & Origin

Fruit snow cones have accompanied Mexicans for over a century. Their history dates to the late 19th century when industrial ice allowed street vendors to offer shaved ice with fruit syrups. Traditional scrapers produce fine, spongy snow. Artisanal syrups are prepared with seasonal fruits. Each region has its favourite flavours: in Michoacan tropical fruit, in the north walnut and vanilla, and in Mexico City lime with chamoy.

Method

    Prepare the syrup: boil 1 cup of sugar with 1 cup of water until dissolved. Leave to cool and add the juice or pulp of your chosen fruit (strawberry, mango, lime, tamarind).

    💡 You can prepare several syrup flavours and store them in the fridge.

    Shave the ice with a snow cone machine or food processor until you have a fine, spongy snow. Fill cups with the shaved ice.

    💡 The ice should be very cold and the crystals fine for best texture.

    Drench generously with the fruit syrup, then add a drizzle of condensed milk.
