History & Origin
Queso fundido is one of the most beloved sharing dishes in Mexican restaurants and cantinas, especially in northern Mexico and Mexico City. Simple in concept, it represents the perfect fusion between Mexican cheese tradition and Iberian cured meats that arrived with Spanish colonisation. Mexican manchego cheese - which bears little relation to its Spanish namesake beyond the name - is a semi-soft cow's milk cheese with excellent melting properties. When gratinated in the oven it becomes creamy inside with a slightly golden, crispy exterior that makes it irresistible. Mexican chorizo is different from Spanish chorizo: it is fresh, not cured, with an intense blend of chilli, spices and vinegar that gives it a very particular flavour. When fried and mixed with melted cheese, it creates a truly addictive combination of flavours and textures. In traditional Mexican cantinas, queso fundido is an essential starter served in small clay dishes or molcajetes straight from the oven. It is always accompanied by freshly made flour or corn tortillas.

Method

Preheat oven to 200°C. Fry 200 g crumbled Mexican chorizo in a dry pan over medium heat for 8-10 minutes until cooked through and slightly crispy. Drain excess fat.

💡 Mexican chorizo is fresh; it is not the cured Spanish variety.

Grate 400 g Mexican manchego cheese or mix manchego with Oaxaca cheese for better melting.

💡 Grated cheese melts more evenly than slices.

In a clay dish or oven-safe dish, spread half the cheese, add the fried chorizo on top and cover with remaining cheese.

💡 A clay dish retains heat better.

Bake 10-12 minutes until the cheese is completely melted and the surface begins to turn lightly golden.

💡 For more colour, use the grill for the last 2 minutes.

Serve immediately in the same dish with warm corn or flour tortillas and green or red salsa to taste.
