Mexican meringues are one of the most visually striking sweets of Mexican popular culture, present at fairs and markets for over a century. These giant meringues in vibrant colours are an iconic image of Mexican street confectionery. Unlike French meringues, Mexican ones celebrate exaggeration and joy. Their history dates to the 19th century, when French confectionery arrived. Mexican cooks made them larger, added brilliant colours and dried them to achieve that unique texture - crisp outside but soft and slightly chewy inside.

Method

Preheat the oven to 100°C. Ensure the bowl and whisk are completely clean and dry.

💡 Any trace of grease prevents the whites from rising.

Whisk the egg whites with the cream of tartar at medium speed until frothy. Increase speed and gradually add the icing sugar.

Continue whisking at high speed for 8-10 minutes until you have a firm, glossy meringue with stiff peaks.

Add the vanilla. Divide the meringue into portions and colour each one differently.

Using a large spoon, form large mounds on baking trays lined with baking parchment.

💡 Make them large: they shrink during baking.

Bake for 1.5 hours at 100°C. Turn off the oven and leave the meringues inside until completely cool.

💡 Don't open the oven while cooling or they will crack.
