Oaxacan mezcal cocktail with grapefruit, lime and worm salt.

About this recipe

The mezcalina is an Oaxacan cocktail that combines artisanal mezcal with fresh grapefruit juice, lime juice, worm salt and ice. It is the smokier, more sophisticated version of the paloma, with the unique character of mezcal and the ritual touch of Oaxacan worm salt.

History & Origin

Mezcalina is an iconic cocktail from the region of Oaxaca, a Mexican state renowned for its rich mezcal tradition. This cocktail combines artisanal mezcal, which is made from the distillation of agave, with fresh grapefruit juice and lime juice, creating a drink that stands out for its complexity and freshness. The addition of worm salt, a typical condiment from the region, not only enhances the flavours but also adds a ritualistic component to its consumption, reflecting the deep connection of the Oaxacan people with their native ingredients. Mezcalina can be considered a more sophisticated variant of the classic Paloma, a popular drink throughout Mexico. However, its smoky character, derived from the mezcal production process, distinguishes it notably. In Oaxaca, mezcal is not just a beverage; it is an integral part of their cultural and social identity, often consumed during celebrations, rituals, and family gatherings. The production of mezcal in Oaxaca dates back centuries, and today, the state is home to a wide variety of producers who use traditional methods, ensuring the authenticity and quality of the spirit. The rise of mezcalina and its popularity in contemporary bars also reflect a resurgence of interest in artisanal drinks and responsible consumption. Thus, mezcalina not only represents a refreshing and sophisticated option but also serves as a symbol of Oaxaca's cultural heritage and the richness of Mexican gastronomy.

Method

  1. 1

Rub the rim of a glass with a piece of lime, then dip it in worm salt to create a salted rim.

💡 Worm salt gives an earthy, smoky flavour characteristic of Oaxaca.

  2. 2

Fill the glass with ice all the way to the top.

  3. 3

Add 60 ml of artisanal mezcal directly over the ice.

💡 Use a young (espadin) mezcal for this recipe; heavily aged mezcals are better sipped neat.

  4. 4

Squeeze the juice of half a grapefruit and one lime over the mezcal. Stir gently.

💡 Use pink grapefruit for a sweeter, more balanced flavour.

  5. 5

Garnish with a slice of grapefruit or lime on the rim of the glass. Serve immediately.
