Sincronizadas are a simple and delicious Mexican snack: two flour tortillas pressed together with ham, cheese and sometimes vegetables, cooked on a griddle until the cheese melts and the tortillas are golden and crispy. They are the perfect Mexican fast food, ideal for light suppers and snacks.

History & Origin

Sincronizadas were born in the 1950s as an evolution of the flour quesadilla from northern Mexico. Their name comes from the idea of synchronising two flour tortillas with filling, pressing them together like a hot sandwich. Unlike a quesadilla which uses a single folded tortilla, a sincronizada employs two stacked tortillas, giving it more structure and crunch. They became enormously popular in fondas and lunch counters across Mexico during the 1970s and 1980s as a cheap and quick supper option. The classic filling is simply ham and Oaxaca or manchego-style cheese, but over time ingredients such as refried beans, poblano chilli strips, mushrooms, spinach or chicken were added. Sincronizadas are a democratic dish found throughout Mexico, from the humblest street stalls to the most sophisticated kitchens. In Mexican homes, they are the perfect solution for a quick supper when there is no time to cook. They are traditionally served cut into triangles, accompanied by guacamole, soured cream and salsa. The versatility of sincronizadas has made them one of Mexico's most popular suppers.

    Place a flour tortilla in a surface limpia. Distribuye a layer of jamon on all the surface.

    Anade a generosa layer of grated cheese tipo Oaxaca or manchego on the jamon. If deseas, anade chilli strips of poblano chilli or champiñones laminados.

    Cook in a comal (flat griddle) or sarten large over medium heat for 3-4 minutes for lado, until the tortillas esten doradas and crispy and the cheese completely melted. Presiona with a espatula while cook.
