Chicharrón (Pork Crackling)

Chicharrón is pork crackling fried until crispy and puffed, a universally loved Mexican snack. It is eaten on its own with red salsa, in chicharrón en salsa verde tacos, in Oaxacan tlayudas, and in chicharrón tamales. There is also a flour-based extruded version, popular as a light snack with chilli sauce.
