Oaxacan pasilla chilli is a smoked variety of the pasilla, with an intensely smoky flavour unique to Oaxaca. It is used in Oaxacan black mole and mole tamales. Unlike the regular pasilla, this chilli is smoked during the drying process, giving it a distinctive deep, earthy character that is hard to replicate.
