Piquín chilli is a tiny wild chilli with extreme heat and bright citrusy, smoky notes. It is used dried and ground to season fruit with chamoy, in molcajete salsas, and in spicy agua fresca. One of the oldest chillies in Mexico, it grows wild in the northern states and adds fiery depth to any dish.
