Bell Pepper

Bell pepper is a sweet, mild chilli available in red, yellow, and green varieties. In Mexican cooking it appears in rajas con crema, chicken or beef fajitas, and roasted salsas. It is charred directly over a flame to loosen the skin and add a smoky, sweet flavour.
