Agua de limon con chia is a refreshing drink that combines fresh lime juice with hydrated chia seeds, sugar and cold water. The chia seeds add a pleasantly gelatinous texture and a nutritional boost to this classic Mexican agua fresca.
History & Origin
Chia (Salvia hispanica) was one of the four principal crops of the Aztecs, alongside maize, beans, and amaranth. Aztec warriors consumed chia before battles for its ability to provide sustained energy. After the Conquest, its cultivation nearly disappeared due to Spanish prohibitions, but it survived in indigenous communities. Chia water with lime was already being prepared in pre-Hispanic times and today remains one of the most popular aguas frescas (fresh fruit waters) in taquerías and fondas throughout Mexico.

Remoja the semillas de chia seeds en un vaso with 200 ml de water durante 15-20 minutes until formen un gel.
