Method

In a glass or jug, add 4 tablespoons of pinole (toasted ground maize) per person. If the pinole already contains cinnamon, skip the next step.
💡 Commercial pinole often includes cinnamon and sugar - read the label to adjust the recipe.

Add half a teaspoon of ground cinnamon and one teaspoon of sugar or ground piloncillo if your pinole is plain and unsweetened.

Pour 250 ml of fresh water per person - it can be room temperature or cold.
💡 Do not use very hot water - pinole is not cooked, it simply dissolves in cold or lukewarm water.

Stir vigorously with a spoon or whisk with a hand mixer for 1 minute until the pinole is completely dissolved. The result should be a slightly cloudy and slightly grainy drink.
💡 The slightly grainy texture is normal and characteristic of authentic pinole.

Serve immediately. The Rarámuri drink it during long runs, so it works well at room temperature for energy recovery.
