Method

Clean the beef trotters thoroughly. Place in a large pot with cold water, bring to the boil and discard this first water.

Cover again with fresh water, add onion, garlic, bay leaves, allspice and salt. Cook for 2 hours over medium heat.

Add the chickpeas soaked overnight and the hominy corn. Cook for a further 30 minutes.

Add carrot and chayote cut into chunks. Continue cooking for 20-25 minutes until everything is tender.

Remove the bay leaves. Adjust salt and serve the broth with dried oregano, chile de árbol and lime to taste.
