History & Origin
Mezcal curado is an Oaxacan tradition that combines the ancestral agave spirit with fresh regional fruits. The word "curado" means to macerate or infuse. This practice originated in the indigenous communities of Oaxaca's Central Valleys, where mezcaleros discovered that adding fruit softened the flavour and created festive drinks perfect for celebrations. The most traditional curados are mango, pineapple, passion fruit and quince. Unlike industrial liqueurs, artisanal mezcales curados are prepared with fresh seasonal fruit and quality mezcal, without artificial colourings. The process is simple but requires patience: the fruit is cut, mixed with mezcal and agave honey, and left to rest for three to seven days.

Method

Peel and cut the mango and the pineapple into small cubes.

Place the fruta in a frasco of glass large and limpio. Add the raja of cinnamon.

Pour the mezcal on the fruta until cubrirla completely.

Add the honey of abeja and mixture gently. Cierra the frasco hermetically.

Leave macerar in a lugar fresh and dark for 5-7 days, agitando gently the frasco a vez to the day.

Strain the mezcal curado for retirar the fruta. Serve cold in jícaras or vasos cortos.
