History & Origin

The Paloma is considered Mexico's national cocktail, paradoxically being more popular within the country than the famous Margarita, which dominates abroad. Its creation is attributed to Don Javier Delgado Corona, owner of the bar La Capilla in the town of Tequila, Jalisco, although the exact date of its invention is uncertain and is believed to be around the 1950s or 1960s. Its simplicity is part of its charm: just tequila, grapefruit fizzy drink (traditionally Squirt or Jarritos), lime juice, salt, and ice, making it an accessible beverage that is easy to prepare at any gathering. It is served in a tall glass with a salted rim and is the drink of choice for the people of Jalisco to accompany an afternoon of mariachi music, a family barbecue, or simply to cool down under the Mexican sun.

Method

    Rub the rim of a tall highball glass with a lime wedge, then dip it into a plate of coarse salt, turning to coat evenly.

    Fill the glass to the top with ice.

    Pour the blanco tequila and lime juice over the ice. Give it a brief stir.

    💡 Use 100% agave tequila for the best flavour. Reposado tequila also works well if you fancy a richer, more full-bodied Paloma.

    Slowly pour the grapefruit soda down the side of the glass to preserve the fizz. Stir gently just once.

    💡 Squirt or Jarritos grapefruit soda are the most traditional choices in Mexico. For a more artisan version, use freshly squeezed grapefruit juice topped up with sparkling water.

    Garnish with a lime wheel on the rim. Serve straight away and enjoy ice-cold.
