Desiccated Coconut

Desiccated coconut is used in Mexican baking to add texture and tropical flavour to desserts. It appears in coquitos (coconut and condensed milk sweets), coconut arroz con leche, Oaxacan coconut ice cream, and southeastern coconut tamales. It also decorates traditional cakes and biscuits across the country.
