Method

    Select a young coconut (green or tender) - it should look smooth and feel heavy, full of water. Shake it to verify you can hear plenty of liquid inside.

    💡 Young coconuts (agua tierna) contain more water and less flesh than mature coconuts.

    With a machete or large, heavy knife, make three or four firm cuts at the top of the coconut until you create an opening of about 5 cm. Alternatively, use a coconut opener.

    💡 If you don't have a machete, use a hammer and a nail to create a hole, then enlarge it with a knife.

    Insert a long straw directly into the opening. The coconut water is ready to drink straight from the coconut.

    Squeeze the juice of half a lime directly into the coconut. Add a pinch of salt and a pinch of piquin chilli powder to taste.

    💡 The chilli and lime add the Mexican flavour dimension - but are entirely optional if you prefer the pure coconut flavour.

    Serve immediately, very cold. If the coconut was not chilled, add a couple of ice cubes inside.
