History & Origin

Mexican pineapple colada agua fresca is a non-alcoholic adaptation of the famous Caribbean drink, reinterpreted through the agua fresca system - one of Mexico's most characteristic and identity-defining culinary traditions. Aguas frescas - sweetened water drinks with fruits, flowers or seeds - are fundamental to everyday and festive Mexican gastronomy, and their preparation and sale is one of the oldest trades in the country's markets. Pineapple (Ananas comosus) was domesticated in South America and was known and cultivated in Mesoamerica before European arrival. The Maya and Aztecs consumed it fresh and used it as a digestive aid. Through Spanish colonisation, pineapple spread across the tropical world and became a symbol of Caribbean and Mexican cuisines alike. Pineapple agua fresca is one of the most popular fresh drinks throughout Mexico. The incorporation of coconut milk into aguas frescas is a Caribbean and southeastern Mexican influence (especially from Guerrero, Oaxaca and Chiapas, states with strong coconut palm presence). This combination creates a creamy, tropical drink - more substantial than traditional agua fresca - perfect for Mexico's hot summer months. Non-alcoholic piña colada agua fresca is prepared in homes and market stalls during summer festivities, Christmas posadas and quinceañeras. Its golden yellow colour and tropical aroma make it visually very attractive - a drink that democratises exotic flavours, accessible to everyone including children, and representative of the creativity of Mexican popular cooking.

Method

    Peel and chop 1 medium pineapple (approximately 1kg clean flesh), removing the tough core. Blend in two batches until completely liquid.

    💡 The pineapple must be very ripe for the agua fresca to be naturally sweet.

    Strain the pineapple juice through a fine sieve or muslin, pressing with a spoon to extract all the juice. Discard the pulp. You should get approximately 700-800ml of juice.

    In the cleaned blender, mix the strained pineapple juice with 400ml tinned coconut milk (not coconut drink), 100g sugar and the juice of 1 lime. Blend for 1 minute.

    💡 Tinned coconut milk is creamier and more flavourful than coconut drink cartons.

    Taste for sweetness and acidity. Adjust with more sugar or lime as preferred. Add 500ml cold sparkling or filtered water and mix well.

    💡 For a creamier version, use 200ml water and 200ml more coconut milk.

    Refrigerate for at least 1 hour before serving. Serve in glasses with plenty of ice and garnish with pineapple slices and toasted desiccated coconut. Stir well before pouring each glass.

    💡 Coconut milk tends to separate on standing, so stir well before serving.
