Cucumber

Cucumber is a refreshing vegetable central to Mexican street food. It features in cucumber agua fresca with lime and chilli, in esquites (street corn in a cup), and in salads with jicama. Its mild flavour provides a cool contrast to the heat of piquín chilli.
