History & Origin
Aguas frescas are one of the most cherished and culturally distinctive elements of Mexican food culture. These fruit, flower and vegetable drinks diluted in sweetened water are omnipresent in markets, taquerías, fondas and street stalls across the country. They are Mexico's answer to the heat: refreshing, affordable, colourful and endlessly varied. Cucumber agua fresca is one of the most popular and traditional. Cucumber provides freshness, hydration and a pleasantly mild, vegetal flavour. In Mexico it is almost always combined with lime, which adds acidity and amplifies the flavour, sometimes with a hint of mint or ginger for complexity. The addition of chia seeds is a relatively recent innovation reflecting the rediscovery of this pre-Hispanic superfood. Chia was a staple for Aztec warriors, used as an energy source during battles. It fell into disuse during the Conquest but was rediscovered in the 1990s and 2000s as a superfood for its nutritional properties: omega-3, fibre, protein and calcium. This combination of cucumber, lime and chia is perfect: cucumber hydrates, lime aids digestion and provides vitamin C, chia provides fibre and satiety, and together they create a drink that is simultaneously a tribute to the agua fresca tradition and a modern, healthful adaptation.

Method

Wash and peel 2 medium cucumbers (or leave the skin if organic). Cut into large pieces.

💡 Leaving the cucumber skin intensifies the flavour and adds nutrients.

Blend the cucumbers with 500ml cold water and the juice of 3 limes. Add 3 tablespoons sugar or honey to taste. Blend for 1 minute.

Strain into a large jug through a fine sieve or muslin cloth. Press to extract all the liquid.

💡 For a thicker texture, use a coarser strainer.

Add 3 tablespoons chia seeds to the jug. Mix well and refrigerate 15-20 minutes for the chia to hydrate and form its gelatinous texture.

💡 Don't leave the chia more than 1 hour or it becomes too thick.

Serve in glasses over ice. Garnish with cucumber slices, a lime wheel and fresh mint leaves if desired.

💡 Add a dusting of piquín chilli powder to the glass for a spicy Mexican version.
