Aguas frescas are a Mexican tradition dating back to pre-Hispanic times, when Mesoamerican peoples prepared refreshing drinks with fruits, seeds and flowers. Pineapple, native to South America, arrived in Mexico in pre-Columbian times.

Method

Peel the pineapple, remove the core and cut into chunks. Blend half the pineapple with one litre of water until smooth. Strain.

Cut the other half of the pineapple into small cubes to add to the jug.

In a large jug, mix the strained pineapple juice with the remaining litre of cold water, sugar and lime juice. Stir until the sugar dissolves.

Add the pineapple cubes and fresh mint sprigs. Refrigerate for at least 1 hour before serving with ice.
