The margarita is the world's most famous Mexican cocktail, made with tequila, orange liqueur and freshly squeezed lime juice, served in a salt-rimmed glass. Whether enjoyed on the rocks or blended as a frozen slushy, its perfectly balanced combination of sharp, sweet and salty has made it a global favourite. Several bars along the northern border claim to have invented it.
History & Origin
The margarita is the most famous Mexican cocktail in the world, and its origin is claimed by at least a dozen stories from bars in Tijuana, Ciudad Juárez, Ensenada and Acapulco during the 1930s and 1940s. One of the most popular versions attributes its creation to Carlos 'Danny' Herrera, who in 1938 prepared it at his restaurant Rancho La Gloria in Tijuana for a client who was allergic to all spirits except tequila. Its classic formula of tequila, orange liqueur and lime juice served in a salt-rimmed glass has remained virtually unchanged for decades, although today there are hundreds of variants with tropical fruits and chillies. The margarita accounts for more than 30% of all tequila-based cocktails sold worldwide, and the 22nd of February is celebrated as National Margarita Day in the United States.

Rub the rim of a margarita glass or old fashioned glass with a lime wedge to moisten it.

Invert the glass onto a plate of coarse salt and twist to rim it evenly. You can rim just half the edge if you prefer a less salty option.
💡 Use coarse or flaked salt, not fine table salt. Coarse salt adheres better and gives a more pleasant texture.

In a cocktail shaker, combine the blanco tequila, orange liqueur, freshly squeezed lime juice and a generous handful of ice.

Shake vigorously for 15-20 seconds until the outside of the shaker is frosty cold.
💡 The lime juice must be fresh, never bottled. Mexican limes (small and green) are the authentic choice.

Strain the margarita into the salt-rimmed glass over fresh ice. Garnish with a lime wheel on the rim. For a frozen version, blend all the ingredients with a cup of ice until slushy and serve without straining.
