History & Origin
The chorizo torta was born in the popular markets of Mexico City in the late 19th century, when street vendors began filling freshly baked bread rolls with the day's stewed dishes. Mexican chorizo, of Spanish origin but completely transformed with local chillies and spices, became the favourite filling for its intense flavour and low cost. In the markets of La Merced, Jamaica and Tepito, sandwich stalls have been preparing these tortas since the early hours of the morning for workers and visitors alike. The combination of chorizo with refried beans is considered by many city residents to be the most satisfying breakfast in the whole city.

Method

Remove the chorizo from its casing and crumble it with your hands. Heat a frying pan over medium heat and fry the chorizo without oil, stirring constantly, until well browned and cooked through, about 10 minutes. Drain off the excess fat.

While the chorizo cooks, slice the rolls in half and toast them on a griddle or in the pan until golden and crispy.

Slice the avocado, tomato and onion. Cut the jalapeño into rounds.

Spread mayonnaise on the base of the roll. Spread a generous layer of hot refried beans on the bottom half.

Place the fried chorizo over the beans. Add the avocado, tomato, onion and jalapeño slices. Season with salt and close the torta. Serve immediately.
