Tostadas de cueritos are one of the most popular street snacks across Mexico. "Cueritos" are pork skin cooked and pickled in vinegar with escabeche chillies, giving a firm gelatinous texture and tangy flavour. On a crisp maize tostada with refried beans, chopped cueritos, shredded lettuce, cream, green salsa, avocado and crumbled fresh cheese. The contrast of textures is essential. In Mexico City they are common at the Merced, Jamaica and Tepito markets. They are an economical, filling snack eaten at any time of day.
