That classic format now coexists with a generation of agave bars working with artisanal mezcals under denomination of origin, 100% agave tequilas and lesser-known spirits such as sotol, bacanora and raicilla — almost always alongside a kitchen more ambitious than a taqueria's.

What sets a good cantina apart: traceability. A serious list names the palenque or distillery, the agave variety (espadín, tobalá, tepeztate) and the state of origin. If the entire mezcal section comes down to two industrial brands, the kitchen usually follows the same logic. The other tell is the food: a cantina that takes cooking seriously serves real botanas — tostadas, ceviches, queso fundido, cochinita — not just nachos.

What is the difference between tequila and mezcal?

Both are agave distillates. Tequila is made only from blue agave, mostly in Jalisco and neighboring states, cooked in steam ovens or autoclaves. Mezcal allows dozens of agave varieties and is traditionally cooked in earthen pits with wood, which gives it its smoky signature. A '100% agave' tequila contains no added sugars; 'mixto' bottlings do.

What does a well-built agave list look like?

One you can trace: the mezcalero or palenque, the agave variety, the state of origin and, where possible, the production year. Good lists also offer side-by-side flights of two or three agaves and serve mezcal in a clay copita, not as a shot with salt and lime.

Do cantinas serve full meals or only snacks?
