The taqueria is the most widespread Mexican format in the United States, and also the most regional: what people order in San Antonio looks nothing like what they order in Los Angeles or Chicago. The Southwest runs on Sonoran-style carne asada grilled over mesquite; the Midwest, especially Chicago's Mexican neighborhoods, leans on Michoacán carnitas and suadero; California and Nevada favor trompo al pastor and Sinaloa-style seafood; and across the whole country, birria — in its quesabirria-with-consommé form — has been the defining dish of the past decade.
How to spot a serious taqueria: the tortilla tells you most of it. A shop that nixtamalizes its own corn — increasingly common, with heirloom corn imported or grown in the US — serves a pliable tortilla that smells of corn rather than of industrial flour. Look as well at the salsa bar (a tomatillo green and a dried-chile red at minimum), whether the meat is chopped to order, and whether the onion and cilantro are cut fresh rather than pre-mixed.

What is the difference between a taqueria and a Mexican restaurant in the US?
A taqueria is built around tacos made to order: counter or bar service, a short menu focused on the meats (al pastor, asada, carnitas, birria, lengua) and fast turnover. A full Mexican restaurant offers a broad menu with soups, mains such as moles or chiles rellenos, desserts and table service.
What is quesabirria and why is it everywhere?
It is a birria taco — the Jalisco-style beef or goat stew — with melted cheese, crisped on the griddle in the fat from the stew itself and served with a cup of consommé for dipping. It took off in the food trucks of Tijuana and Los Angeles and spread from there to practically every US city.
How can I tell whether the tortilla is nixtamalized corn?
A nixtamalized tortilla folds without cracking, smells distinctly of cooked corn and usually has an uneven color (white, yellow or blue, depending on the corn). Industrial ones are more uniform, drier and split when folded. Many taquerias that mill their own masa say so on the menu or the storefront.

Yes. Each business is checked against at least two independent sources (official website, Google Maps listing, local press) before publication, and any field that cannot be confirmed is left empty. Even so, hours and menus change: it is worth calling ahead before a long trip.
