White Fish

White fish such as tilapia, red snapper, or sea bass is fundamental to Mexican coastal cooking. It is prepared as fish ceviche, Baja-style fish tacos, pescado a la veracruzana with tomatoes and olives, and fish tamales. It is marinated with lime and chilli before grilling or frying for maximum flavour.
