Method

Char the green chillies directly over the hob flame until the skin blisters and blackens. Place them in a sealed plastic bag to steam for 10 minutes.

💡 Chilaca or Anaheim chillies are the most commonly used in Chihuahua.

Peel the chillies, remove the seeds and veins. Cut into long, wide strips.

In a frying pan with oil, sweat the onion in half-moon slices until translucent. Add the diced tomatoes and cook for 3 minutes.

Add the chilli strips, season with salt and pepper. Cook for 3 minutes to allow the flavours to meld.

Distribute the sliced asadero cheese over the chilli strips. Cover the pan and cook over low heat until the cheese has melted completely.
