About this recipe
Pork chops in green salsa is a homestyle stew where the chops are seared and finished cooking in a tomatillo, serrano chilli and coriander salsa. A simple, quick and flavourful dish.
History & Origin
The combination of pork with green tomatillo salsa is one of the oldest and most widespread in Mexican cuisine. The tomatillo, native to Mesoamerica, was cultivated since pre-Hispanic times and its natural acidity helps tenderise meat.
