The combination of pork with green tomatillo salsa is one of the oldest and most widespread in Mexican cuisine. The tomatillo, native to Mesoamerica, was cultivated since pre-Hispanic times and its natural acidity helps tenderise meat.

Method

    Season the chops with salt and pepper. Sear in a hot oiled pan for 3 minutes each side until golden. Remove and set aside.

    Boil the peeled tomatillos and serrano chillies in water for 10 minutes until they change colour.

    Blend the tomatillos, serrano chillies, onion, garlic and coriander with a little cooking water.

    In the same pan, fry the green salsa for 5 minutes over medium heat. Season with salt.

    Return the chops to the salsa, cover and cook on low heat for 15-20 minutes until cooked through and the salsa has thickened.
