Huevos divorciados (divorced eggs) are an ingenious creation from Mexican fondas that combines the two fundamental flavours of Mexican cuisine: salsa verde and salsa roja. Their humorous name reflects the popular Mexican wit for naming dishes. They emerged as a Solomonic solution for couples who could not agree on which salsa they preferred with their breakfast eggs. The line of refried beans separating them acts as a 'border' between both worlds of flavour. They are such a popular breakfast that they appear on the menu of virtually every Mexican restaurant.

Method

Heat the tortillas on a comal (griddle) until lightly golden. Place 2 tortillas on each plate, side by side.

Calienta ambas salsas for separado en dos cacerolas pequeñas.

Fry the eggs in hot oil, two at a time, until the white is set but the yolk is still runny.

Coloca un egg on each tortilla en el dish (2 eggs for dish).
