Huevos tirados are a traditional Sonoran breakfast of scrambled eggs mixed with refried beans and served with flour tortillas. It is the most popular breakfast in north-western Mexico - simple, hearty and full of flavour.
History & Origin
Huevos tirados are the quintessential breakfast of Sonora and north-western Mexico, a recipe born of the ranchers' practicality of using up the previous day's leftovers. The name 'tirados' refers to the way the refried beans are 'thrown' or stirred together with the eggs in the pan. This technique arose in the homesteads of the Sonoran desert, where cowboys needed a quick, nutritious breakfast that would keep them going through long working days under the blazing sun. Leftover beans from supper were reheated and mixed with fresh eggs from the henhouse, creating a dish that is far greater than the sum of its parts. The enormous, thin sobaquera flour tortilla typical of Sonora is the indispensable accompaniment. Huevos tirados are prepared in every Sonoran household and are the most requested dish at breakfast eateries in Hermosillo, Ciudad Obregón and the towns along the Río Sonora.

Method

Heat the lard in a frying pan over medium heat. Add the refried beans and deja that calienten well, moving them.

💡 If the beans están very espesos, add a little stock or water.

Beat the eggs with salt and viértelos on the beans hot in the frying pan.

Stir all junto with a spatula, mixing the eggs with the beans until the eggs they are cocidos pero still jugosos.

💡 La clave es not sobrecocinar: the eggs deben be cremosos, not dried.

Heat thes flour tortillas in a comal (flat griddle) until they are flexibles and with marcas doradas.

Serve the eggs tirados with the flour tortillas, sauce to taste and crumbled fresh cheese for encima.
