History & Origin

Crab tostadas are one of the most representative seafood antojitos from the port of Veracruz and the entire Gulf of Mexico coast. The jaiba, known in the English-speaking world as the blue crab (Callinectes sapidus), is a crab that lives abundantly in the coastal lagoons, estuaries and shallow waters of the Gulf of Mexico. The jaiberos, fishermen specialising in its capture, are iconic figures of Veracruz coastal communities. Veracruz has one of the most diverse and rich culinary traditions in Mexico, the product of the convergence of Totonac indigenous, Afro-Mexican, Spanish and Arab cultures that met in this important port during centuries of trade and cultural exchange. Gulf seafood occupies a central place in this cuisine, and the blue crab in particular has dozens of different preparations: in broth, stuffed, in chilpachole, fried or in tostadas. The tostada version is the most popular and accessible preparation. On the Veracruz waterfront, the Boca del Río market and the beaches of Antón Lizardo, crab tostada stands are ever-present. The combination of the crispy tostada, the freshness of crab seasoned with lime and coriander, and the creaminess of avocado creates a perfectly balanced bite of contrasting textures. The crab is steamed or boiled, cooled and carefully shelled. This shredded meat is mixed with the "Veracruz tostada sauce": a combination of tomato, red onion, jalapeño chilli and coriander dressed with lime juice and salt.

Method

    Cook 400g whole crabs or use 250g cleaned crab meat. If using fresh crabs, boil in salted water with garlic for 12-15 minutes. Cool and extract the meat.

    💡 Good quality canned crab meat is an excellent time-saving alternative.

    Finely chop: 2 tomatoes, 1/4 red onion, 1-2 deseeded jalapeño chillies, 1 bunch of coriander. Mix with the crab meat.

    Dress with the juice of 3 limes, salt to taste and 1 tablespoon olive oil. Mix well and refrigerate for 10 minutes.

    💡 Taste and adjust lime and salt. The mixture should be well seasoned.

    Peel and slice 2 avocados. Reserve some coriander leaves for garnish.

    Assemble the tostadas: spread a thin layer of refried beans first (optional), add 2-3 tablespoons of crab salad and garnish with avocado slices, coriander and extra lime. Serve immediately.
