Mexican Cooking for Two: Romantic Recipes for Date Night In

Forget the overpriced restaurant. Create an unforgettable Mexican dinner for two at home with ceviche appetizers, mole-glazed duck, Mexican chocolate fondant and margaritas. Elegant, impressive and surprisingly achievable.

Why Mexican Food Is Perfect for Date Night

When you think of romantic dinner cuisine, Mexican food probably does not spring to mind. French, Italian, Japanese - these are the cuisines that restaurants charge a premium for on Valentine's Day. Mexican food, by contrast, is associated with casual eating - tacos, burritos, nachos.

This is a failure of imagination, not a failure of cuisine. Mexican food offers everything you want from a romantic dinner: vibrant colours, complex flavours, dishes that can be prepared in advance, and a sense of occasion that transforms a Tuesday evening into something memorable.

Setting the Scene

  • Music: Create a playlist of Mexican boleros (romantic ballads). Luis Miguel, Natalia Lafourcade, Mon Laferte, Cafe Tacvba - all available on Spotify.
  • Candles: Obviously. Warm, flickering light flatters everyone and everything.
  • Flowers: If you can find marigolds (cempasuchil), they add an authentic Mexican touch.
  • Drinks: A pitcher of margaritas (recipe below) or a good mezcal with orange slices.

The Menu

Cocktail: Classic Margarita for Two

Forget the frozen, slushy, neon-green concoction served at chain restaurants. A real margarita is one of the world's great cocktails - clean, sharp, perfectly balanced.

For two drinks: Combine 100ml good tequila (100% agave, blanco), 50ml fresh lime juice (about 3 limes), 30ml Cointreau or triple sec, and 10ml agave syrup. Shake vigorously with ice for 15 seconds. Strain into salt-rimmed glasses over fresh ice. Garnish with a lime wheel.

The key is fresh lime juice - never use bottled. And the tequila matters: spend a few pounds more on a decent 100% agave blanco.

Appetizer: Tuna Tostadas

This is an elegant, restaurant-quality dish that takes 15 minutes.

For two: Dice 150g sashimi-grade tuna into 5mm cubes. Toss gently with: juice of 2 limes, 1 tablespoon soy sauce, 1 teaspoon sesame oil, half a finely diced avocado, 1 tablespoon finely diced red onion, 1 finely sliced green onion, a pinch of dried chili flakes, and fresh cilantro. Spoon onto 4 tostadas. Top with thin slices of jalapeno and a drizzle of chipotle mayo.

This dish is beautiful - the pink tuna against the creamy avocado and golden tostada is visually stunning.

Main Course: Mole-Glazed Duck Breast

Duck and mole are a match made in culinary heaven. The richness of duck fat meets the complexity of mole in a combination that is deeply luxurious.

For two: Score the skin of 2 duck breasts in a crosshatch pattern. Season generously with salt. Place skin-side down in a cold, dry skillet. Turn the heat to medium-low and cook for 12-15 minutes until the skin is deeply golden and crisp. Flip and cook for 3-4 minutes more for medium-rare. Rest for 5 minutes.

Meanwhile, dissolve 3 tablespoons of mole paste (from a Mexican shop) in 150ml warm chicken stock. Simmer for 10 minutes. Slice the duck breast and fan it over the mole sauce on warm plates. Garnish with sesame seeds and pomegranate seeds. Serve with Mexican rice.

Side: Mexican Rice

Rinse 150g long-grain rice. Blend 2 tomatoes with half an onion and a garlic clove. Fry the rice in 1 tablespoon oil for 3-4 minutes until translucent. Add the tomato puree and stir until absorbed. Add 300ml chicken stock, salt, and cilantro sprigs. Cover, reduce heat, cook for 18 minutes without lifting the lid. Fluff with a fork.

Dessert: Mexican Chocolate Fondant

A classic chocolate fondant with Mexican spices - cinnamon, a hint of chile and a touch of coffee.

For two fondants: Melt 100g dark chocolate (70%) with 80g butter. Whisk 2 eggs with 60g superfine sugar until thick and pale. Fold in the chocolate mixture, then fold in 30g all-purpose flour, half a teaspoon of ground cinnamon, a tiny pinch of cayenne pepper and half a teaspoon of instant coffee powder. Pour into 2 well-buttered ramekins (dusted with cocoa powder). Refrigerate for at least 30 minutes. Bake at 200C for 12-14 minutes. Turn out onto plates immediately. Serve with vanilla ice cream.

Alternative Menu Ideas

  • Simple appetizer: Guacamole made tableside (mash avocado with lime, salt, cilantro and chile in a molcajete or bowl in front of your guest).
  • Simple main: Carne asada - marinated, grilled steak served sliced with charred green onions, warm tortillas and salsas.
  • Simple dessert: Churros with chocolate sauce (buy frozen churros; make sauce by melting dark chocolate with cream, cinnamon and a pinch of chile).

Cooking Together

One of the best things about Mexican food for date night is that many dishes lend themselves to cooking together. Making guacamole, assembling tacos, or shaking margaritas are all activities that work beautifully as a shared experience. If your date enjoys cooking, consider making the meal a collaborative project rather than presenting a finished dinner. The process of cooking together - bumping elbows, tasting, adjusting, laughing when something goes wrong - is often more romantic than any perfectly plated course.
