Mexican Recipes for the Air Fryer: Quick and Crispy

The air fryer is perfect for Mexican cooking, producing crispy taquitos, churros, empanadas, elote and more with a fraction of the oil. Here are ten tested recipes that deliver authentic Mexican flavours from your air fryer in 30 minutes or less.

The Air Fryer Meets Mexican Cuisine

The air fryer has become one of the most popular kitchen appliances in Britain, and for good reason - it produces crispy, golden results with minimal oil, in less time than a conventional oven, and without heating up the entire kitchen. But while most British air fryer recipes focus on chips, chicken wings and reheated leftovers, the appliance is actually ideally suited to Mexican cooking.

Many of Mexico's best-loved dishes involve frying - taquitos, flautas, empanadas, chiles rellenos, churros, tostadas, chimichangas. Traditionally, these are deep-fried in oil, which produces extraordinary results but also produces extraordinary quantities of used cooking oil, spattering and lingering kitchen smells. The air fryer offers a practical compromise: not quite as perfectly crispy as deep-frying, but close enough to satisfy, and far more convenient for weeknight cooking.

Air Fryer Tips for Mexican Cooking

Before diving into the recipes, a few general principles:

  • Spray with oil: A light spray of cooking oil (use an oil mister or buy spray oil) is essential for browning and crisping. Without it, tortillas and pastry will dry out rather than crisp up.
  • Do not overcrowd: Air fryers work by circulating hot air, so items need space between them. Cook in batches if necessary.
  • Preheat: Preheat your air fryer for 3-5 minutes before cooking for the most consistent results.
  • Use toothpicks: When making rolled items like taquitos, secure them with toothpicks to prevent unrolling. Remove before serving.
  • Check halfway: Shake the basket or flip items halfway through cooking for even browning.

1. Air Fryer Taquitos (Flautas)

Taquitos - small corn tortillas rolled around a filling and fried until crispy - are perhaps the single best Mexican dish for the air fryer. The hot circulating air crisps the tortilla beautifully while keeping the filling moist inside.

Method: Warm corn tortillas briefly in the microwave (10 seconds) to make them pliable. Fill each with 2 tablespoons of shredded chicken tinga, shredded beef or refried beans. Roll tightly and secure with a toothpick. Spray lightly with oil. Air fry at 200°C for 8-10 minutes, turning halfway, until golden and crispy. Serve with guacamole, sour cream and salsa verde.

2. Air Fryer Churros

Churros - the crispy, ridged, cinnamon-sugar-coated dough sticks - are traditionally deep-fried, but the air fryer produces a remarkably good version with a fraction of the oil.

Method: Bring 250ml water, 50g butter, 1 tablespoon sugar and a pinch of salt to the boil in a saucepan. Remove from heat, add 150g all-purpose flour and beat vigorously until the mixture forms a smooth ball that pulls away from the sides of the pan. Let it cool for 5 minutes, then beat in 2 eggs, one at a time, until smooth and glossy. Transfer to a piping bag fitted with a large star nozzle. Pipe 10cm lengths onto a baking parchment-lined air fryer tray. Spray with oil. Air fry at 180°C for 10-12 minutes until golden and puffed. Roll immediately in a mixture of superfine sugar and ground cinnamon. Serve with chocolate dipping sauce.

3. Air Fryer Elote (Mexican Corn)

Elote - grilled corn on the cob slathered with mayonnaise, cheese, chile and lime - is one of Mexico's greatest street foods. The air fryer chars the corn beautifully without needing a barbecue.

Method: Husk 4 ears of corn. Spray lightly with oil. Air fry at 200°C for 12-15 minutes, turning twice, until charred and tender. Brush with mayonnaise, sprinkle with grated Parmesan (substitute for cotija), chili powder (or Tajin seasoning) and a squeeze of lime. Scatter with chopped cilantro.

4. Air Fryer Empanadas

Empanadas - half-moon pastry parcels filled with spiced meat, beans, cheese or vegetables - emerge from the air fryer with a shatteringly crispy crust.

Method: Use shop-bought shortcrust pastry (or make your own). Roll out and cut into 12cm circles. Fill each with 2 tablespoons of picadillo (spiced ground beef with potatoes, raisins and olives), or refried beans and cheese, or shredded chicken in salsa. Fold in half, crimp the edges with a fork. Brush with beaten egg and spray with oil. Air fry at 190°C for 10-12 minutes until golden brown. Serve with salsa and lime wedges.

5. Air Fryer Quesadillas

While quesadillas are traditionally cooked on a flat griddle, the air fryer produces an extra-crispy version with bubbly, golden tortilla and melted cheese inside.

Method: Fill flour tortillas with grated cheese (mozzarella and Cheddar mix), plus optional additions: sliced jalapeños, cooked chicken, black beans, sweetcorn, diced peppers. Fold in half. Spray both sides with oil. Air fry at 190°C for 5-7 minutes until the tortilla is crispy and golden and the cheese is melted. Cut into triangles and serve with salsa, guacamole and sour cream.

6. Air Fryer Chimichangas

A chimichanga is essentially a deep-fried burrito - a flour tortilla wrapped around a filling and fried until crispy. It is a Tex-Mex creation (not traditionally Mexican) but enormously popular, and it works brilliantly in the air fryer.

Method: Fill large flour tortillas with shredded chicken or beef, refried beans, rice, cheese and salsa. Fold like a burrito, tucking in the ends. Place seam-side down in the air fryer. Spray generously with oil. Air fry at 200°C for 8-10 minutes until golden and crispy on all sides, turning once. Top with sour cream, guacamole, salsa and shredded lettuce.

7. Air Fryer Tortilla Chips (Totopos)

Forget buying tortilla chips - making your own from corn tortillas in the air fryer takes 5 minutes and produces superior results.

Method: Cut corn tortillas into triangles (6 per tortilla). Toss lightly with oil and salt. Spread in a single layer in the air fryer basket. Air fry at 180°C for 5-7 minutes, shaking halfway, until crispy and golden. Season immediately - plain salt, chile-lime, or garlic-cumin. Use for nachos, dipping in salsa and guacamole, or as a base for chilaquiles.

8. Air Fryer Stuffed Jalapeños (Jalapeño Poppers)

Jalapeño poppers - halved jalapeños stuffed with cream cheese, wrapped in bacon and baked until crispy - are a Tex-Mex bar snack that the air fryer handles perfectly.

Method: Halve 12 jalapeños lengthwise and remove the seeds and membranes (wear gloves). Fill each half with cream cheese mixed with grated Cheddar, a pinch of garlic powder and cumin. Wrap each in half a rasher of bacon. Air fry at 190°C for 8-10 minutes until the bacon is crispy and the cheese is bubbling. Serve with ranch dressing or sour cream.

9. Air Fryer Plantain Chips (Platanutres)

Green plantain chips are a popular snack across Mexico and the Caribbean. The air fryer produces thin, crunchy chips with far less oil than deep-frying.

Method: Peel 2 green plantains (the unripe ones - they should be very firm and green, not yellow). Slice very thinly using a mandoline. Toss with a small amount of oil and salt. Spread in a single layer in the air fryer. Air fry at 180°C for 8-10 minutes, shaking every 3 minutes, until golden and crispy. Season with lime juice and chili powder while still warm.

10. Air Fryer Mexican Pizza

A Mexican pizza uses flour tortillas as the base, layered with refried beans, cheese, meat and toppings, and baked until crispy. It is not traditional, but it is delicious and takes 10 minutes in the air fryer.

Method: Place a flour tortilla in the air fryer. Spread with refried beans. Add a layer of cooked spiced ground beef or chicken. Top with grated cheese, diced tomato and sliced jalapeños. Air fry at 190°C for 5-7 minutes until the tortilla is crispy and the cheese is melted and bubbling. Top with shredded lettuce, sour cream and hot sauce.

Getting the Best Results

The air fryer will not perfectly replicate the results of deep-frying in oil - the Maillard reaction and crispiness achieved by full immersion in hot oil are difficult to match. However, for everyday cooking, the air fryer produces results that are 80-90% as good with a fraction of the effort, mess and oil consumption. For Mexican cooking specifically, the air fryer excels at items with a tortilla exterior (taquitos, quesadillas, chimichangas), pastry items (empanadas, churros) and items that benefit from dry heat and charring (corn, peppers).
