History & Origin
The gordita is a traditional Mexican antojito that exists in different versions throughout almost the entire country. In central Mexico the gordita is a thick, small maize dough disc that is fried or cooked on a comal and then opened to fill with stews, beans or cheese. In the north, especially in Tamaulipas and Nuevo Leon, gorditas are larger and deep fried in oil. The Gordita Crunch was created by Taco Bell in 1998 as part of their strategy to create dishes that mix textures in an innovative way: a fried maize dough gordita is placed inside a soft flour tortilla, creating the crispy-soft contrast that distinguishes this product from everything else on the menu. Although Taco Bell's creation is a commercialised and simplified version, the idea of combining a crispy fried dough with a soft wrapper has precedents in Mexican cookery: northern gorditas are sometimes served wrapped in a flour tortilla for easier eating. The homemade version of this dish has gained enormous popularity on social media, especially TikTok and YouTube, where food creators compete to make the most faithful and delicious homemade version. The key is achieving the gordita dough with the perfect texture, then frying at the correct temperature for a golden, crispy exterior without absorbing excess oil.

Prepare the gordita dough: mix maize flour with warm water, salt and a tablespoon of lard until you have a smooth dough. Shape into discs 1 cm thick and 10 cm in diameter.

Season the beef mince with taco seasoning, cumin and a little water. Cook in a frying pan until well done and the sauce thickens, about 10 minutes.

Fry the dough discs in oil at 175°C for 3-4 minutes per side until golden and crispy on the outside but cooked through.

Cut the gordita horizontally in half to open it like a pocket. Fill with cheddar cheese and microwave or oven for 1 minute until the cheese melts.

Add the seasoned beef mince inside the gordita. Top with shredded lettuce, tomato, soured cream and jalapeños.

Wrap the filled gordita in a small warm flour tortilla (Taco Bell style). Serve immediately to enjoy the crispy-soft contrast.
