History & Origin
Meatloaf arrived in Mexico with Spanish influence but soon acquired its own identity with chillies, cumin and Mexican oregano. Today it is a family favourite across the whole country.

Method

Mix the beef mince with raw egg, finely chopped onion and garlic, salt, pepper and cumin. Knead thoroughly.

Spread the meat mixture on cling film forming a rectangle about 1.5 cm thick.

Place the whole hard-boiled eggs and grated carrot in the centre. Roll up using the cling film to form a tight log.

Roast the tomatoes and chilli with onion and garlic, then blend with oregano to make the sauce. Season with salt.

Place the unwrapped meatloaf in a baking dish. Pour over the tomato sauce and cover with foil.

Bake at 180 °C for 50 minutes. Uncover for the last 10 minutes to brown. Slice and serve with the sauce.
