History & Origin
Morisqueta is the quintessential everyday dish of Michoacán, particularly from the Apatzingán region and the Tierra Caliente. Its name derives from "Moriscos", referring to the Arab-Spanish influence on rice preparation during the colonial era. Morisqueta consists of white rice steamed to fluffy perfection, accompanied by pork stewed in red tomato and chilli sauce, plus refried beans. This trio forms the perfect daily Michoacán meal. In Michoacán, morisqueta is part of the cultural identity. It is eaten daily in homes, eateries and markets, and every cook has their own sauce version.

Method

Wash 2 cups of rice in cold water until clear. Drain well. In a lidded pot, heat 1 tablespoon oil, add rice and sauté 2 minutes. Add 3.5 cups hot water and salt. Cover, reduce to minimum heat, cook 18-20 minutes.

💡 Perfect ratio is 1.75 cups water per cup of rice.

For the meat sauce: roast 4 tomatoes, 2 guajillo chillies and 1 ancho chilli on a griddle. Blend with 1 garlic clove and water.

Cut 400g pork into small pieces. Sear in a pan with oil until golden. Add strained sauce, salt and cumin. Cook 25-30 minutes until tender.

For refried beans: heat 2 tablespoons lard. Add 400g cooked black beans with broth. Mash. Cook 10 minutes.

💡 Pork lard gives authentic flavour.
