Toksel is an ancestral Mayan sweet of toasted ground pumpkin seeds bound with honey, formed into balls or bars.
History & Origin
Toksel is a pre-Hispanic Mayan sweet that has survived virtually unaltered for over a thousand years. Its name in Maya means "toasted thing". This sweet is the Mayan version of marzipan, but uses pumpkin seeds that the Maya considered sacred. The seeds are toasted, ground to fine powder, and mixed with honey from melipona bees. It has an important role in contemporary Mayan ceremonies and has been included in tasting menus by contemporary Yucatecan chefs.

Tuesta 300 g de pepita pelada en comal seco 8-10 minutos hasta bien doradas.

💡 Cuidado: se pasan del punto muy rápido.

Deja enfriar. Muele en procesador hasta polvo muy fino.

Pasa el polvo por un tamiz. Devuelve los trozos al procesador.

Calienta 100 g de miel de abeja hasta que esté líquida. Mezcla gradualmente con el polvo, amasando.

💡 La miel de melipona es la más auténtica.

Forma bolas del tamaño de una nuez, presionando firmemente.

Deja secar 2 horas. Guarda en recipiente hermético. Duran hasta 2 semanas.
