Alfalfa water with lime is one of the healthiest and most refreshing fresh waters in the Mexican tradition.

History & Origin

Alfalfa, originally from Central Asia, arrived in Mexico with the Spanish during the sixteenth century as livestock fodder. However, Mexican culinary ingenuity transformed it into the key ingredient of one of the country's most emblematic fresh waters. Alfalfa water became popular in urban Mexican markets during the twentieth century. Professional lucha libre wrestlers popularised its consumption in the 1960s. Today, alfalfa water is experiencing a new wave of popularity both in Mexico and amongst the Mexican diaspora.

Method

    Thoroughly wash 2 cups of fresh alfalfa sprouts under cold running water.

    Step 1

    💡 Fresh alfalfa can be found at markets or health food shops.

    Blend the alfalfa with 2 cups of water, the juice of 4 limes and half a cup of sugar until bright green.

    Strain through a fine sieve over a large jug. Discard the fibre.

    Add 1 litre of cold water. Stir well and adjust sweetness or lime acidity. Refrigerate for at least 30 minutes.

    Serve well chilled with plenty of ice. Garnish with a lime wheel.

    💡 For a more complete version, add a chunk of pineapple when blending.
