Diced pork loin in tomato and xcatic chilli sauce with Yucatecan spices.

About this recipe

Lomitos de Valladolid is a Yucatecan stew of diced pork loin in a tomato sauce with xcatic chillies and spices.

History & Origin

Lomitos de Valladolid is one of the most emblematic stews of Yucatecan gastronomy, originating from the beautiful colonial city of Valladolid. The sauce distinguishes this stew: roasted tomato, xcatic chilli (a sweet aromatic chilli exclusive to Yucatan), roasted purple onion, garlic and spices like allspice, Yucatecan oregano and cumin. It is served with white rice and handmade maize tortillas.
