Mexican ceviche has its roots in the Pacific coast. Heart of palm marinated in lime juice surprisingly mimics the texture of white fish, creating a vegan ceviche that is authentic in concept and flavour.

Method

Drain the heart of palm and cut into 1 cm thick slices. Place in a bowl and pour over the juice of all the limes. Mix and leave to marinate for 10 minutes.

💡 The lime acid cooks the heart of palm, softening it slightly, just as it does with fish.

Add the finely sliced red onion, serrano chile in thin rounds and diced tomato. Mix with the marinated heart of palm.

Add the diced cucumber and chopped cilantro. Season with salt and mix gently.

Add the diced avocado just before serving. Mix carefully to avoid crushing it.

💡 Add the avocado at the last moment to prevent it oxidising or breaking down.

Serve cold in glasses or deep bowls, with tortilla chips on the side. Also excellent on tostadas.
