Method

Drain and thoroughly dry the black beans. In a large bowl, mash them with a fork or masher until you get a rough paste with some whole pieces remaining.

💡 Don't mash completely: some whole pieces give the patty a better texture.

Add the rolled oats, chopped chipotle, garlic, cumin and salt. Mix well until combined. The mixture should be workable and not sticky.

💡 If the mixture is too wet, add a little more oats at a time.

Shape into 4 patties roughly the same size as the brioche buns. Place on a tray and refrigerate for 15 minutes to firm up.

Make the guacamole: mash the avocado with lime juice, salt and coriander. Set aside.

Heat oil in a frying pan over a medium heat. Cook the patties for 3-4 minutes per side until golden and firm. Toast the brioche buns in the same pan.

💡 Don't move the patties during the first few minutes or they will break apart.

Assemble the burgers: bottom bun, generous guacamole, black bean patty, jalapeños and the top bun. Serve immediately.
