History & Origin

Huevos motuleños were born in the city of Motul, in the state of Yucatan, at the beginning of the 20th century. The most widely accepted legend attributes their creation to Don Jorge Siqueff, owner of a small restaurant called La Economica, who first prepared them for Governor Felipe Carrillo Puerto during a visit to the city. The genius of this dish lies in its layered construction: first a lightly fried tortilla, then a spread of smooth black beans, a fried egg on top, and everything bathed in tomato sauce with chillies. The accompaniments of ham, peas, crumbled fresh cheese and fried plantain create a perfect balance between sweet, savoury, creamy and crunchy. Motul is a small henequen-producing town that gained fame thanks to this dish. Every restaurant and food stall in Motul has its own version, and there is a friendly rivalry over who prepares the best huevos motuleños. Today huevos motuleños are found throughout Yucatan and are the favourite breakfast of many. They have crossed borders and are served in Mexican restaurants worldwide as an example of the richness of Yucatecan breakfast cuisine.

Method

    Prepare the sauce: asa the tomatoes and the habanero chilli in a comal (flat griddle). Blend with a little water and salt. Strain and cook in a frying pan with a little oil 10 minutes.

    💡 If not quieres mucho picante, usa only half habanero or remove the seeds.

    Heat the black beans colados in a frying pan small until they have consistency untable.

    Fry thes tortillas slightly in oil hot until they are firmes pero not crispy. Drain on papel absorbente.

    Peel and cut the plantain into rounds diagonales of 1 cm. Fry in oil hot until golden on both sides.

    Fry the eggs in oil hot, with the yemas líquidas or to taste.

    Assemble the plate: spread each tortilla with bean black, place a egg frito encima, drizzle with the sauce of tomato, add cubitos of jamón and peas.

    Sprinkle with crumbled fresh cheese and serve with the rodajas of banana frito. Serve immediately.
